Sometimes, you make discoveries in the most unlikely places. You wouldn’t expect to hear the perfect recipe for coconut macaroons while reclining in the dentist chair with a noisy suction hose hanging from your lip. But my dental hygienist Kelley Coulson nonchalantly told me about these crunchy, chewy gems while working on my teeth. She even gave me one to sample on my way out the door. Please, don’t tell the dentist!

While the recipe may seem “absurdly simple,” as Kelley puts it, these macaroons have a magnificent, complex flavor and a crispy crunch that will put a lasting smile on your face. They pair wonderfully with ice cold champagne and soak up extra sweetness when drizzled with Grand Marnier.

Just don’t forget to brush your teeth!

Ingredients

1 pound sweetened, flaked coconut
2 teaspoons vanilla extract
1 can sweetened condensed milk

Instructions

In a medium mixing bowl, combine coconut, vanilla, and just enough sweetened condensed milk to make the mixture firm.

Drop onto parchment-lined baking sheet and bake for 10 to 12 minutes at 350°F, until toasty golden on the edges.
